Typical Crau soils, expertise from the Vallée des Baux de Provence
Black fruity extra virgin olive oil, AOP Provence, made from Aglandau and Grossane olive tree varieties planted on the dry lands of La Crau in Provence. An appellation “Noir d’Olive” obtained with expertise through mechanical processes. which reveals, upon tasting, the sweetness of flavors reminiscent of candied black olives. A parfume with a smooth character and refined flavours
Bordered by the wild landscapes of Camargue and overlooked by the enduring limestone massif of the Alpilles, the steppe-like lands of the plain of La Crau reflect the aridity of the Mediterranean climate. A terroir of protected Provence, with its appellation, on which the Aglandau and Grossane olive tree varieties have been rooted since 2008. These varieties are passionately cultivated by the family-owned Castelas mill in Les Baux de Provence.
Aglandau and Grossane, a gourmet blend of varietal characteristics
Indeed, without prior tasting, it can be challenging to understand the notable differences between all the black, green, and monovarietal olive oils. Especially between a naturally more expensive, higher quality olive oil and a more accessible olive oil with a more exotic origin, the differences can be significant. In this blend, Grossane and Aglandau come together to extract a black fruity flavor from matured olives.
Aglandau, also known as Beruguette in some regions, displays on its olive tree a vibrant green color subtly speckled with white dots. ChatGPT Its acorn-like silhouette (hence its nickname) contains within its firm flesh, the fresh notes of a green fruity flavor with hints of almond and artichoke aromas. A variety of olives that is light in bitterness and pungency, lending itself to being used primarily for olive oil production rather than as table olives. It doesn’t quite extend an invitation to be enjoyed as green table olives.
The Grossane olive variety, or Groussan, lounges on its tree with its purplish-black color and significant roundness. Its soft and brown flesh preserves the flavors of a black fruity taste with gentle notes of butter and citrus. Devoid of its pungency and bitterness, this variety is used for both table olives and olive oil production.
The matured blend of these two distinct olive varieties results in a typical black fruity flavor with a well-defined character that is representative of Provence.
