Located between the rugged terrain of the Camargue and the imposing limestone formations of the Alpilles, the vast plains of La Crau resemble a steppe, mirroring the dryness characteristic of the Mediterranean climate. In the heart of Provence lies a terroir safeguarded by its prestigious designation. Here since 2008, thrive Aglandau and Salonenque olive trees meticulously nurtured and expertly cultivated by the family-owned Moulin Castelas in Les Baux de Provence, France.

Aglandau, also known as Beruguette in some regions, displays on its olive tree a vibrant green color subtly speckled with white dots. With a shape reminiscent of an acorn, hence its nickname, the Aglandau olive boasts a firm flesh and carries the refreshing tones of a green fruity flavour, complemented by subtle hints of almond and artichoke aromas. A distinct olive variety known for its subtle bitterness and sharp flavour, making it ideal for olive oil production rather than for consumption as table olives.
The Salonenque olive derives its name from the region surrounding the city of Salon-de-Provence, where it is traditionally cultivated. This variety of medium size features a softly uniform green flesh reminiscent of a pear in appearance. These olives are utilized to achieve a delicate green fruity flavour, unveiling naturally fragrant vegetal notes complemented by subtle hints of artichoke and hazelnut aromas. Rich and velvety, this particular variety from Salon-de-Provence is cherished for its dual purpose – whether savoured as olive oil or relished as table green olives.
